My patient asked for Salmon cakes for lunch... I'm not too familar with them. Any tips?

The ones I know of are salmon mixed with mashed potatoes with a bit of onion and then formed into a patty then fried.

They are delish...you make cakes out of tinned salmon and mashed potatoes and then fry them up
use mayonaise, bits of celery, mustard, lemon pepper, regular pepper, olive oil, drained can of salmon, salt, onion salt and bread crumbs

mix together and then plop down on metal tray and fry

or broil

serve with tarter sauce and hot buns and lettuce/tomato

or ketchup is really good too

Canned or fresh salmon with bones and skin removed. Watch for the spine segments if you use canned salmon. Canned salmon is already cooked. Flake the salmon. Mix with one or two beaten eggs and about 1/2 cup of bread crumbs. If your patient can tolerate onion, add finely diced onion and/or celery. If not, season with onion powder and a tiny bit of celery salt.

It is almost like meatloaf or meatballs, but with salmon instead of hamburger.

Form into patties or cakes, and fry on both sides on low heat in a mixture of butter and olive oil. If fats are an issue, spray the pan with non-stick cooking spray instead.

If the patient can tolerate it, make a cup of white sauce...roux of flour and butter, whipped with 1 cup of milk and cooked over low heat while stirring constantly. You can put a spoonful of this sauce on top of the salmon cake, and sprinkle lightly with paprika.

@Sunnykel76 I've tried frying mashed potatoes, and they have to be really thick if you are going to use them in the Brit recipe. No added milk or butter, and have to be blended in while hot. Anyway, regular mashed tend to flatten out and they don't brown well.
I mean my mom just called them fishcakes and she would use either Tuna or Salmon I'm pretty sure she just mixed together Salmon and Potato, coated them in flour and then fried them until they were crispy on the outside and soft on the inside. I love them so much!

I make them with 1 can of drained salmon, silvery skin scraped off, add 2 medium eggs, mashed potatoes, ginger, a couple tablespoons of minced onion, ginger powder, dry or fresh chopped parsley, salt & pepper, form into small round patties, roll in flour & fry

Can of pink salmon, red is better but stronger. Remove bones and skin. Hand mix in two slices of bread and add flour to get the right consistency to hold together when you make a patty. Little salt and pepper. Fry it. I was raised on these. Still the best.

All of the replies are good but I mash the bones and skin, into the mix, along with the broth. If not, one is missing out on more omega 3’s, minerals and nutrients. The bones are now so soft, you can’t even tell and adds to the flavor. Just the way I cook it.😋
