What are you supposed to do when someone you don't know is throwing up?

Except for minding my own business and walking away, I mean.

I was babysitting my niece and nephew, playing in a nearby kindergarten playground, when I noticed that this other woman there was crouching next to a tree and vomiting her guts out while her kids were playing on a nearby swing set. I asked from a distance if she was okay, and she replied she was just really nauseous. She vomited for like, 15-20 minutes.

If this had been late at night, I would've gone over and helped hold back her hair, or at least stayed with her, but as it was the middle of the day... I didn't know why she was vomiting, and I didn't want the risk of it being the stomach flu. Dealing with toddlers with stomach flu is the worst, no thank you.
Thankfully my niece had to go to the bathroom, so we left and went home.

I'm going to call the kindergarten and tell them someone vomited there, but I can't help but wonder what the best way of handling the situation would've been, 'cause I don't think this was it.

Ask if she needed help or if you could call someone for her

Hmmmm.... unless you’re equipped with gloves and a mask , the best you could do would be to call an ambulance

I concur @TexChik

I would've asked whether she wants me to call the ambulance, or maybe get her some water.

You were right to be cautious. Stomach flus are hellish and can spread very quickly.
She probably has some good drugs. Go and check her pockets.
I might’ve asked if they needed 911 (for an ambulance) called.

Try to ask her if she's going to be okay.
