Phoenix/firebird because I love the symbolism of rising from the ashes

Dryads because I love trees and the idea of tree spirits

Mermaids because they’re pretty

Manticores bc they’re delightfully terrifying

But off of the top of my head:

Selkie: because I think their origin story has a lot to do with how women felt at the time, being married to men they didn't want to be.

Kelpie: because who doesn't like a demon water horse that lures people in order to eat them?

Lamb of Tartary: they're just... weird.

And of course I like unicorns.
