What would our architecture be like if gravity was not an issue to that ?

I’m not an architect, and I don’t know what kind of design changes would result....but it reminds me of Benny Hill’s response when a friend asked him why he threw his clothes on the floor:
“Because they won’t stick to the ceiling".
