I Love To Share And Swap Recipes

I eat this almost every day. It's delicious and so easy.

1 small zucchini, cut into round slices
1 small yellow squash, cut into round slices
1/2 of a small sweet onion cut into slivers
1 tsp butter or coconut oil
Salt and pepper to taste
Grated parmesan to taste

Heat the butter or coconut oil in a frying pan. Add onion slivers, zucchini, and squash.

Sauté all til onions are caramelized and squash and zucchini are tender but not soggy (about 15 mins).

Add salt, pepper, and parmesan.

Sauté further, til the parmesan is melty and browned. (I like a lot of Parmesan!!)

Similar to Ratatouille. I would use olive oil, add tomatoes, red capsicum and fresh chilli to your ingredients. Mushrooms and eggplant optional.
