Non Dairy Fish Chowder The Second [I Like To Share Recipes]

Makes a little less than 3 quarts.
Warning: I am able to eat small amounts of butter, even though lactose intolerant. Those who are unable to tolerate butter should use margarine.

2 slices of bacon, diced
Non stick cooking spray
1 stick of butter or margarine
3 small onions, diced
6 small, short stalks of celery, diced
3 frozen tilapia filets, large, in individual vacuum wrappers
Sea salt, 1/2 tsp
Cayenne Pepper, 1 dash
2 (15 OZ) cans Taste of Thai coconut milk, shaken well
3 (15 oz) cans diced potatoes, drained


Slice 2 slices of bacon into long strips, and then cut into dice crosswise.

Spray the bottom of a 3 quart saucepan with non stick cooking spray, and gently heat the bacon over low heat. Continue heating until the bacon fat just begins to render, and then remove from the pot with a slotted spoon. Reserve the bacon fat in the pot.

To the bacon fat, add 6 to 8 tablespoons of butter, or just add 1 stick. Heat on very low heat till the butter is melted, then reduce heat to warm.

While the butter is melting, dice three small onions, and 6 small short stalks of celery. Add them to the butter, and simmer them at warm heat...not quite up to low heat...for about 20 minutes.

Remove 3 individually wrapped large tilapia filets from the freezer,, and allow them to sit out at room temperature.

When the celery is no longer bright green in the pot, hold the wrapped filets under hot water until they are easy to cut out of their wrappers. On a fish cutting board, cut the frozen filets into chunks about 1" x 1".

To the pot, add 2/3 cup of flour and stir well, and then add the chunks of tilapia and stir well.

Add one dash of cayenne pepper and add 1/2 tsp of salt.

To the fish and veggies, add the bacon, stir again. Then shake 2 cans of coconut milk and add them to the veggies and fish. Stir again.

Add three drained cans of diced potatoes to the pot.

Stir well.

Continue to heat on low. This will take a long time, but if you heat this to the boil, it will begin to separate and get grainy. Heat until a finger touch is too hot, and then serve.

6 very generous servings or 8 normal sized servings.
