Paula Dean's Awesome Cheesy Maple Pork Breakfast Casserole

I wanted to post a breakfast dish I learned when I was a kid. Our neighbor used to make a breakfast casserole she called Stretch, because it stretched the number of eggs she had, and it fed more people. The recipe used stale white bread, eggs, milk, and American cheese slices, and you just assemble it the night before, leave it in the fridge, covered, and the bread absorbs the milk. Then you bake it. It's a good casserole...BUT I actually TASTED the Paula Dean casserole at a brunch I attended, and it is just levels above the one I remember, made by our neighbor, if a little more expensive to make.
But if you leave out the sausage and the mustard, they are the same thing. 馃槉
