If you are roasting a turkey this year, try this simple trick before roasting.
Mix softened butter with fresh herbs, such as chopped rosemary, sage, thyme, and parsley. Chill the butter until hard enough to slice.
At the opening where you normally place stuffing, take a very sharp knife and slide it up from the bottom of the turkey right under the skin up high onto the sides of the breasts. Wiggle the knife a bit to create a space, and, wearing gloves, place slices of herb butter up inside that incision.
This is like a butter and flavor bomb directly on the breast meat, which can, at times, be a bit flavorless.
You can do this, also, with smaller birds, such as chicken and cornish hens.
