Casserole Topping by 4meandyou

If you have ever run out of dried breadcrumbs, as I did last week, you might decide not to make a casserole rather than have it dry out on top.

I tried this experiment last week, and it worked beautifully.

1 cup plain instant mashed potato flakes
1 1/2 Tablespoon onion powder
Butter

This makes a thin layer of protective topping on a 13" x 9" casserole and it is delicious, better than bread crumbs in my opinion.

Mix together the potato flakes and the onion powder and top your casserole with them, and dot the top of the casserole with butter.

Bake your casserole (example below) for one hour, and the topping will come out beautifully browned.

Winter Chicken Casserole by 4meandyou

Spray a 12" x 9" rectangular casserole dish with non-stick cooking spray.

Preheat oven to 350 degrees F.

Mix together 4 cups cooked rice and 2 cans condensed cream of mushroom soup. Spread the rice mixture on the bottom of the dish.

Layer 1 package boneless skinless raw chicken strips on top of the rice, sprinkle with salt and onion powder.

Over the top of the chicken, empty one enormous bag of frozen mixed broccoli, cauliflower, carrot pennies and yellow summer squash. The top of the dish should be completely covered.

Top with the potato topping, (above) dot with butter, and bake at 350F for one hour.
