4meandyou's Chorizo Meatloaf
2 medium/small onions chopped
1 pound 80/20 ground beef
1/2 pound ground pork chorizo
3 eggs
1/4 cup hot water
1 heaping tsp beef bouillon paste
1 1/3 cup plain bread crumbs
2 tsp cilantro
Preheat oven to 350 Fahrenheit.
Dissolve the bouillon paste in the hot water. Put this and all other ingredients in a large bowl, and, wearing plastic gloves, thoroughly mix all ingredients. Continue to squeeze and mix until you can no longer see the bright orangey red of the chorizo.
Spray a loaf pan with non stick spray, place meatloaf mixture in pan and bake 40-45 minutes. Remove from oven and, holding meatloaf down with a spatula, tilt the pan and drain out the fat, which will be orange. Remove the meatloaf to a plate, and slice.
This is good served with rice or mashed potatoes, or chop the meat and use as a taco filling.
